LEMON BARS

Crust
3/4 cup butter, softened
1 1/2 cups flour
1/2 cup confectioners sugar

Filling
4 eggs
2 cups sugar
1/4 cup flour
1 tsp baking powder
2 tsp grated lemon peel
1/3 cup lemon juice
Confectioners sugar, for garnish

Heat oven to 350. Grease a 13x9 inch baking pan. Mix together crust ingredients until mixture holds together and forms a dough. Press over bottom of prepared pan. Bake 15 minutes until light golden and firm when touched. Beat topping ingredients until blended and pour over base. Bake 25-30 minutes or until golden brown and set. Cool in pan on wire rack. Dust with confectioners sugar before cutter.

VARIATION: Instead of dusting with sugar, make a glaze from 1 tbsp lemon juice, 2/3 cup confectioners sugar and 1 tsp lemon zest.
