POTATO PANCAKES

Category: Potatoes

1 cup flour
1 cup milk
4 eggs
3 tbsp butter, melted
3 tbsp sugar
1/4 tsp baking powder
1/2 tsp salt
1 tbsp chopped fresh parsley
1 tbsp minced onion
2 1/2 cups frozen hash brown, thawed or 4 shredded fresh potatoes

Combine all ingredients, except potatoes, in a large bowl. Beat until smooth. Add potatoes to the batter and mix by hand until potatoes are well combined.

Let the batter rest while you preheat skillet to medium heat. Grease the pan with butter and ladle 1/4 cup dollops of butter into pan. Cook as many at a time will fin into pan and cook for 1 1/2 - 2 minutes per side or until golden brown.
