DEVILED SHRIMP

2 lbs large shrimp, shelled and deveined with tail on
1 whole lemon sliced
1 red onion, sliced thin
1 cup pitted black olives, well drained
2 tbsp chopped pimiento
1/4 cup oil
2 clove garlic, minced
1 tbsp dry mustard and salt
1/2 cup lemon juice
1 tbsp red wine vinegar
Dash cayenne pepper
Chopped parsley, to taste

Bring 1 quart salted water to a boil, add shrimp, and cook for about 3 minutes. Drain and rinse in cold water; drain again and set aside.

In a bowl, combine next 4 ingredients; toss well. IN a separate bowl, combine remaining ingredients and then add to the bowl with the lemon mixture. Arrange the shrimp on a serving dish and pour marinade over them. Cover and chill no longer than 3 hours. Pour reserved marinade in a small bowl and arrange shrimp on a platter. Serve with toothpicks. Use marinade as a dip for the shrimp.
