CINNAMON FLOP BRUNCH CAKE

1 1/4 cups milk
1 large or extra-large egg
2 tsp vanilla or 1 tsp almond extract
1 1/4 cups sugar
2 cups flour
3 tsp baking powder
1/8 tsp salt
Topping:
1/2 cup brown sugar
1 1/2 tsp cinnamon
1/4 cup melted butter
Chopped walnuts or pecans (optional)
1 glaze recipe
Preheat oven to 350. Grease 2 (8 or 9 inch) round cake pans or a 13 x 9-inch baking pan.
In a medium or large bowl, combine the milk, egg and vanilla and sugar; add in the flour, baking powder and salt, gently mix using a wooden spoon until just combined (careful not to over mix). Pour into prepared pan/s.
Sprinkle the brown sugar and cinnamon over the top, then drizzle the melted butter over the brown sugar/cinnamon. Top with chopped nuts if using. Bake for 20–25 minutes for 8 or 9-inch round pans, and about 30 minutes for 13 x 9-inch pan. Drizzle top with a glaze
