Shelly's Recipe

*POTATO CHEESE CALICO SOUP*

1 lb potatoes, peeled and thinly sliced
1 cup sliced onion
2 1/2 cups chicken bouillon
1/2 cup milk
1 cup sliced mushrooms
1/2 cup diced red bell pepper and sliced green onion
1 cup Asiago cheese
Salt and pepper, to taste
2 tbsp chopped parsley

In a 3 quart saucepan, combine first 3 ingredients and bring to a boil, cover and cook just until potatoes are tender, about 10 minutes. Pour into container of a food processor and blend until smooth. Return to saucepan. Mix in next 4 ingredients and bring to a simmer over medium low heat. Add cheese, a few tbsp at a time, stirring to melt between additions. Season with salt and pepper. Ladle into bowls, sprinkle with parsley.
