PORK TENDERLOIN WITH SAGE CRUMB COATING

2 (1/2 lb) pork tenderloins
1 1/2 tbsp Dijon mustard
1 cup soft bread crumbs
2 tsp rubbed sage
1 clove garlic, minced
1/8 tsp pepper

Trim fat from tenderloins, place on a rack in a shallow roasting pan coated with cooking spray. Brush tenderloin with mustard.

Combine bread crumbs with remaining ingredients and press mixture over tenderloins. Insert meat thermometer into thickest part of tenderloin. Bake at 400 for 30-35 minutes or until thermometer registers 160.
