FAJITA WINGS

3 pkg fresh chicken wings or fresh chicken wingettes
1/4 cup lime juice and red wine vinegar
2 tbsp vegetable oil
3 cloves garlic, minced
2 tsp chili powder
1/4 cup chopped fresh cilantro
Salt and freshly ground black pepper to taste
Dipping Sauce
1/2 onion, cut into 1/2 inch thick slices and grilled
1 cup prepared onion dip
1 tsp chili powder
If using wings, separate at joints and discard tips. Combine remaining in bowl, whisking to blend. Transfer to a resealable plastic bag and add chicken. Turn bag to coat chicken evenly. Refrigerate for 4 to 24 hours.
Preheat grill to medium-high heat. Remove chicken from bag and discard marinade. Grill onion slices for dipping sauce (recipe below). Cook wings for 3 to 5 minutes per side, moving around as needed to keep them from charring too much, until browned and cooked through. To test for doneness, remove a large wing from grill and cut into it; juices should run clear. To prepare Dipping Sauce, mince grilled onion. Combine in a small bowl with onion dip and chili powder. Servings: 4
