1 lb sweet Italian sausage, cut into 1/2 inch slices
2 clove garlic, minced
2 cups mushrooms, sliced
1 medium onion, chopped
1 (14 oz) can diced tomatoes
1/2 tsp dried, basil, chopped
1/2 tsp dried oregano, chopped
1/4 cup beef broth
1 large zucchini, cubed
1/2 lb pasta (any type), cooked al dente, drained
Parsley, garnish

While pasta is cooking, saute sausage and garlic over medium high heat for 10 minutes or until the sausage is browned. Add mushrooms and onions; saute an additional 3 minutes. Stir in tomatoes with juice, seasonings, broth and zucchini. Bring to a boil and reduce heat to low; cover and simmer 5-10 minutes or until zucchini is tender. Toss with cooked pasta and sprinkle with chopped parsley. Serves 4.
