APPETIZER CHICKEN TENDERS

1 pkg boneless, skinless chicken breasts, cut into strips
2 tbsp brown mustard
3/4 tsp ginger
2 tbsp cider vinegar
2 eggs
1 1/2 cups fine breadcrumbs
1/4 cup flour seasoned with salt and pepper
Sauce:
1/2 cup sour cream
1/2 tsp ginger
2 tbsp brown mustard
Preheat oven to 400. Rinse chicken and pad dry.
Make a dipping station:
In a shallow bowl, beat eggs, 2 tbsp mustard, ¾ tsp ginger, and vinegar. Place breadcrumbs on a plate and the seasoned flour on another. Coat the chicken in the following order: flour, egg mixture and then breadcrumbs.
Place coated chicken on a baking sheet. Bake at 400 for 9-11 minutes or until chicken is done. Meanwhile, make the sauce by blending the sour cream, remaining 2 tbsp mustard and 1/2 tsp ginger. Serve chicken with sour cream mixture.
