PEANUT BUTTER CHIPS BROWNIE CUPS

1 cup butter
2 cups sugar
2 tsp vanilla extract
4 eggs
3/4 cup cocoa and flour
1/2 tsp baking powder and salt
1 2/3 cup peanut butter chips, divided
Heat oven to 350. Line 18 muffin cups with foil baking cups. Melt butter and stir in sugar and vanilla. Add eggs; beat well. Add cocoa; beat until blended. Add dry ingredients and beat well. Stir in 1 1/3 cups peanut butter chips. Divide batter evenly into muffin cups; sprinkle with remaining chips and bake for 25-30 minutes or until surface is firm. Cook completely in pan on a wire rack.
LEMON DREAM BARS
3 cups graham cracker crumbs
3/4 cup butter, melted
1 egg, plus 3 egg yolks
1 can sweetened condensed milk
1/2 cup lemon juice
Preheat oven to 350. In a large bowl, mix together graham cracker crumbs, butter and lightly beaten egg until combined. Reserve one cup of the mixture. Press remaining crumb mixture into a bottom of a 13x9 inch baking pan. Bake 10-15 minutes or until lightly toasted.
With a mixer, beat egg yolks, condensed milk and lemon juice. Spread over pressed crumb mixture. Top with reserved crumb mixture. Bake 25 minutes longer or until set. Cool. Refrigerate 2 hours. Cut into bars. Store leftovers, covered, in refrigerator.
