VEGETABLE STUFFED PORTOBELLOS

4 portobello mushrooms
2 tbsp unsalted butter
1/4 cup onion, minced
1/4 tsp garlic, minced
1 stalk celery, minced
1/4 cup tomato, seeded and chopped
1 tsp dry marjoram
1/2 cup bread crumbs
Salt and pepper, to taste

Preheat oven to 400. Wipe mushrooms clean. Remove stems and mince; set caps aside. Melt butter over medium heat. Add onions, garlic, celery and mushroom stems and cook for 5 minutes. Stir in bread crumbs. If too dry, add a little stock or water. Spoon mixture into caps. Place on an oiled baking sheet. Bake, uncovered, for 20 minutes
