ITALIAN CELEBRATION SANDWICH

1 pkg sweet Italian turkey sausage links
1/4 cup extra-virgin olive oil
2 cloves garlic, mashed
1 White onion, thinly sliced
1 Green bell pepper, cut into strips
1 Red bell pepper, cut into strips
Salt and ground pepper
6 Hoagie buns, split
1 cup prepared marinara sauce
1 cup shredded mozzarella cheese

Prepare grill for cooking. In small bowl, combine oil and garlic. In medium bowl, combine onion and bell peppers; add half the oil mixture and toss to coat thoroughly. Add salt and pepper to taste. Fold heavy-duty foil to form 2 or 3 packets; poke holes in foil with fork. Grill sausages, uncovered, 5 to 6 inch over medium-hot coals 15 minutes until cooked through, turning often. Add vegetables to foil packets and grill alongside sausages until tender. Brush rolls with remaining garlic oil; grill about 5 minutes until lightly toasted.

Meanwhile, warm sauce in small pan at edge of grill. To serve, place a sausage on bottom half of each roll; top with sauce, cheese, vegetables and top of roll.
