SOUFFLED MAPLE FRENCH TOAST

5 eggs
1/2 cup maple syrup
Pinch of salt
1/2 tsp baking powder
1/4 cup heavy cream
4 (1 inch) slices French bread
5 tbsp melted butter
Ground nutmeg
2 tbsp sugar
Whisk eggs in bowl; beat in syrup and salt until thoroughly blended. Dissolve baking powder in cream; beat into egg mixture. Place bread on large baking sheet and pour egg mixture over bred. Let bread soak 30 minutes turning frequently.
Preheat to 450. Place baking dish in oven to heat in oven about 3 minutes. Brush 3 tbsp of melted butter over hot dish that will contain the bread slices; arrange slices over butter area about 1 inch apart. Sprinkle with nutmeg. Bake 8 minutes.
Remove from pan, brushing with remaining melted butter and sprinkle with sugar. Continue to cook another 8 minutes until puffy and browned on top. Serve immediately.
