FAJITAS - Crock Pot

Meat
1 1/2 lb flank steak
1 cup chopped onion
1 green pepper, cut into 1/2 inch pieces
1 or 2 jalapeno pepper, chopped
1 tbsp snipped fresh cilantro
2 clove garlic, minced
1 tsp chili powder, ground cumin and ground coriander
1/4 tsp salt
1 (8 oz) can stewed tomatoes, undrained

12 (7 inch) flour tortillas
2-3 tsp lime juice

Toppings
Shredded cheese, Guacamole, sour cream and salsa

Trim fat from meat. Cut into 6 portions. In a 3 1/2-quart crock pot combine meat ingredients. Cover and cook on low-heat setting for 8-10 hours on low or 4-5 hours on high.

Heat tortillas by wrapping in foil and heating in oven at 350 for 10-15 minutes or until softened. Remove meat from crock pot and shred. Return meat to cooker. Stir in lime juice. To serve, us a slotted spoon and fill the warmed tortillas with meat mixture. Add desired toppings. Serves 6
