STRAWBERRY & CARAMEL CHEESECAKE

Strawberry cheese cake:
1 lb cream cheese
8 oz sugar
2 t. cornstarch
6 eggs
1 cup strawberry puree
1 tsp lemon juice
Mix cream cheese in a mixing bowl until it is fluffy. Add the sugar and cornstarch and mix well. Add eggs one at a time and stir after each addition. Add strawberry puree and lemon juice. Set mixture aside.
Caramel Mixture:
1/2 cup milk
1 3/4 cup heavy cream
3 oz sugar
7 egg yolks
1 whole egg
1/2 cup caramel syrup
Graham cracker crumbs
Combine milk and cream and heat until just boiling. Meanwhile, mix egg yolks and whole egg with the sugar in a mixing bowl until fluffy. Slowly add the warm milk and heavy cream, then caramel syrup.
Fill the bottom of the cake ring with Graham cracker crumbs about 1/8 inch thick and bake for 10 min. at 350. Pour the cream cheese mixture into the ring to half the height of the ring and bake in an oven at 300 for 45-50 minutes. Allow to cool down to room temperature and then refrigerate until completely chilled. Pour the caramel mixture on the top and bake for 45-50 minutes.
Allow to cool at room temperature for 45 minutes and then refrigerate. Garnish with strawberry halves or dust with confectioners sugar and caramelize.
