RISOTTO WITH PARMESAN - Crock pot

1/4 cup olive oil
2 shallots, peeled and minced
1 1/4 cup Arborio rice
1/4 cup dry white wine
3 3/4 cups chicken broth
1 tsp salt
1/2 to 2/3 cup grated parmesan cheese
Heat oil in a small saute pan and saute shallots until softened. Place in crock pot. Stir in rice to coat with oil. Stir in wine, broth and salt. Cover and cook on HIGH for 2 hours or until liquid is absorbed. Just before serving, stir in the cheese. Serves.
NOTE: I like to stir in about 1 tbsp dried Italian seasoning or dried basil along with the rice. Serves 4
