MUSHROOM AND RED WINE PASTA SAUCE

1 small onion, finely chopped
1 large carrot, finely chopped
1 tbsp butter
3 cups thinly sliced mushrooms
1 1/2 cups beef sock/broth (or juice from roast beef)
2 tbsp flour
1/2 tsp seasoned salt
1/2 tsp salt
1/4 tsp ground black pepper
Pinch Accent (MSG)
1/2 cup dry red wine
Pinch thyme
1 large sprig parsley
1/4 bay leaf

Cook onion and carrot in butter until soft.

Add mushrooms. Cook gently 15 minutes.

Put bouillon or juice into pint jar with tight cover. Add flour, seasonings. Cover: shake until smooth. Stir into mushroom mixture until it boils. Reduce heat; add remaining ingredients. Simmer 10 minutes. Remove parsley and bay leaf.

Makes 2 1/2 cups
