LIME POKE CAKE WITH FLUFFY LIME FROSTING

1 pkg lemon cake mix
1 envelope unsweetened lime soft drink mix
1 cup diet 7-Up or Sprite (or can use water, orange flavored water will work well)
3 eggs
1/3 cup vegetable oil
2 (3 oz) pkgs lime gelatin, divided
1 cup boiling water
1 cup cold water

Frosting:
1 cup cold light cream (such as half and half, can use full-fat milk)
1 1/2 tsp vanilla extract
1 (3.4 oz) pkge instant vanilla pudding mix
1 (8 oz) carton frozen Cool Whip topping, thawed

In a large bowl, combine cake mix, Kool Aid drink mix, 7-Up or water, eggs and oil; beat on low speed for 30 seconds, then beat on medium for 2 minutes. Pour into a greased 13 x 9-inch baking pan. Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.

Using a small-holed straw poke holes all over in the warm cake, then cool on a wire rack for 30 minutes.

Meanwhile in a large bowl dissolve one package of gelatin in boiling water, then stir in cold water; Pour evenly all over the top of the cake. Refrigerate until completely cold (about 4 or more hours, if you are refrigerating more than 4 hours cover with plastic wrap).

For the frosting; in a large bowl, combine the light cream with vanilla, pudding mix and remaining one package of Jell-o gelatin; beat on low for 2 minutes, then allow to stand for 5 minutes.

Using a spatula fold in the Cool Whip topping until thoroughly blended. Refrigerate until ready to use.
