OPEN-FACED SEAFOOD SANDWICHES

4 English muffins, split and toasted
3 tbsp butter, melted
1 (6 oz) can lump crabmeat, drained and picked clean
1 (6 oz) can small shrimp, rinsed and drained
3/4 cup shredded cheddar cheese, divided
1/2 cup chopped celery and ripe olives
1 tbsp fresh minced parsley
1/4 cup mayonnaise
1 tsp lemon juice
1/2 tsp Dijon mustard and Worcestershire sauce
Shredded cheddar cheese, for topping
Brush muffins with butter; set aside. Gently combine remaining ingredients until seafood is coated.. Place a rounded 1/4 cup of mixture on each muffin half; sprinkle with cheese. Place on a baking sheet and broil 4-5 inch from heat for 3-4 minutes or until heated through and cheese is melted. Serve immediately. Serves 4.
