CHICKEN QUESADILLAS

4 boneless, skinless chicken breasts, cut into small pieces
3 tbsp butter
2 clove garlic, minced
8 oz fresh mushrooms, sliced
1 tsp ground cumin
Salt, to taste
4 oz jar mild green chilies, drained, chopped
1 cup chopped fresh broccoli, steamed
8 flour tortillas
2 1/2 cups shredded cheddar or taco cheese, divided
Green onions and red pepper, chopped
Picante sauce

Melt butter in a large skillet. Add chicken pieces and stir-fry until done; remove from skillet; set aside. Add garlic and mushrooms to skill and stir-fry until mushrooms are limp. Add onions, salt, chilies and broccoli, cooking until just heated.

Preheat oven to 350. Place four tortillas on a lightly greased cookie sheet. Layer chicken, vegetable mixture and 1 2/3 cups of the cheese, in that order, over tortillas, dividing equally. Top with remaining tortillas. Sprinkle with remaining cheese and chopped green onions and red pepper. Bake 10-12 minutes. Cut each quesadilla into 4 wedges. Serve immediately with picante sauce.
