1 tbsp olive oil
2 chopped onions
2 sliced cloves garlic
1 1/2 lbs ground chicken breast and ground lean veal
2 tsp chili powder
1/2 tsp ground oregano
1 tsp ground cumin and salt
1/2 cup rum
2 tbsp tomato paste
1 can tomotoes with chilies, undrained
3 cans red kidney beans, drained and rinsed

Heat oil in a Dutch oven and saute the garlic and onion. Add the meat, stirring until browned. Add remaining ingredients; mix well. COver and cook on low heat at least 2 hours, stirring occasionally. Taste for additional seasoning and add if necessary. Serve individual bowls and top with Pico de Gallo.
