CREAMED CIDER CHICKEN

2 cups thinly sliced onions
1 cup apple cider
1/2 cup chicken broth
6 boneless, skinless chicken breasts
1/2 cup apple cider or apple brandy
1 1/2 cups heavy cream
1/2 tsp salt
1/4 tsp white pepper
2 tbsp chopped almonds
2 tbsp thinly sliced green onions
2 tbsp chopped mushrooms
In a skillet, combine first 4 ingredients and bring to a boil. Reduce heat and cover. Simmer 15-20 minutes and remove chicken to a heated platter; cover and keep warm
Add cider to skillet and increase heat to high. Boil 5-8 minutes or until 1/2 cup of liquid is left. Add cream; boil 3-5 minutes more until sauce coats a spoon and is reduced to 1 cup. Season with salt and pepper. Drain off juices that have accumulated to platter. Strain sauce through sieve over chicken breasts and sprinkle with almonds, onion and mushrooms. Serves 6
