PENNE PASTA WITH CHICKEN

4 chicken boneless, skinless breasts
1 lb uncooked penne pasta
1/4 lb fresh baby spinach
1/4 cup olive oil
1 cup julienne sun-dried tomatoes
1/4 cup freshly grated Parmesan
1 1/2 cups freshly grated Asiago cheese, divided
1 tbsp minced garlic
1/4 tsp salt
1/4 tsp pepper
1/4 cup olive oil

Grill chicken breasts and set aside to keep warm.

Cook pasta according to pkg directions. Pour cooked pasta into a large mixing bowl. Add spinach, sun-dried tomatoes, Parmesan, 1/2 cup Asiago, minced garlic and salt and pepper. Toss until all ingredients are well combined. Drizzle in olive oil. Toss again.

Mound a greens onto serving plates. Slice chicken on bias and place a breast on top of each mound of greens. Sprinkle each serving with an additional 1/4 cup Asiago and serve.
