SHRIMP BROCHETTES

21 cloves garlic
1 cup fresh lime juice
6 tbsp olive oil
2 tsp sugar and Worcestershire sauce
1/2 tsp salt
1 lb large shrimp, shelled and deveined, leaving tails attached

Herbed Couscous
2 cup water
1/2 tsp salt
1 1/2 up couscous
2 tbsp fresh chopped basil and parsley


Garnish
Chopped parsley and thin lime wedges

Combine 4 garlic cloves, finely chopped and next 8 ingredients. Add shrimp, cover, and refrigerate 30 minutes to marinate.

In a saucepan, heat 3 inch water to boiling. Add remaining garlic and cook 1-2 minutes or until garlic softens slightly. Remove from heat; drain.

While preparing couscous, heat broiler or grill. Thread with garlic and shrimp repeating 3 times and ending with garlic. Brush skewers with marinade. Cook 3-4 minutes on each side or until shrimp is cooked through and garlic browns lightly. Divide couscous among serving plates and garnish with lime wedges

Prepare couscous by heating water with salt. Remove from heat and stir in couscous. Cover tightly and set aside 5 minutes. With fork, stir in chopped basil and parsley. Serves 4
