1 box pizza dough mix or refrigerated pizza dough
4 tbsp olive oil
1 tsp dried oregano
1/2 tsp salt
Dash pepper
1 cup sliced scallions, both white and green parts
1 cup sliced pepperoni or cooked sausage
1 clove garlic, minced
1 1/2 cups tomato puree
4 tbsp tomato paste
1 tbsp minced fresh parsley
1/3 cup grated mozzarella cheese
2/3 cup grated parmesan cheese
Prepare dough as directed on box. While the dough is rising, heat oil in skillet. Add garlic and onion and saute for 10 minutes. Stir in puree, paste, seasonings and meat. Simmer 5 minutes and cool to room temperature.
Punch dough down and roll out on a floured board to a 10x14 inch rectangle. Spread with sauce and add mozzarella cheese, leaving 1 inch uncoated around the edge. Roll up on the 10 inch side to create a 14 inch long roll. Press edges to seal.
If necessary wet edges with a little water to seal firmly. With a sharp knife, cut roll into 9 even slices, each about 1 1/2 inches wide. Place rolls cut side up on greased cookie sheet. Sprinkle about 1 tbsp parmesan cheese over each roll. Place in a warm area; cover with a towel, let rise for 30 minutes.
Preheat oven to 375 and bake for 25 to 30 minutes or until dough has browned and cheese is melted.
