SWEET AND SPICY STEAK KABOBS

1/2 cup apricot preserves
1 cup Italian dressing
2 cloves garlic, chopped
1/4 tsp red pepper flakes
2 lb beef sirloin tip, trimmed and cut into 1 1/4 inch cubes
1 onion, cut into wedges
1 medium green or red bell pepper, cut into chunks

In a bowl, combine first 4 ingredients to make marinade. Place 3/4 cup of marinade and beef cutes in a resealable bag; refrigerate a least 2 hours or overnight. Refrigerate remaining marinade in refrigerator.

Remove beef from marinade and thread alternately with vegetables onto skewers. Transfer to prepared grill; brush with reserved marinade and cook over medium-high heat for 8-10 minutes, turning twice. Serves 6
