2 seedless cucumbers, English or hothouse
1/2 small or medium sweet onion, minced
1 tbsp cider vinegar
1 tsp salt
3/4 cup mayonnaise
1/2 cup sour cream
1 tsp dried dill, crumbled
1/8 tsp hot pepper sauce
Pepper, to taste
Finely chopped dill, for garnish
Wash cucumbers, pat dry, trim ends and slice thinly into rounds and place in a medium or stainless steel mixing bowl. Add the onions and toss together. Sprinkle with salt and vinegar and toss to coat, cover with plastic wrap and let stand at room temperature for 30 minutes.
In the meantime, in a bowl, whisk together the next 5 ingredients until combines. Drain cucumber mixture well but do not rinse and add to the dressing. Fold and mix until coated with dressing. Cover and refrigerate for at least 1 hour and serve immediately adding additional dill sprinkled over top.
