NEW YORK STEAKS WITH ROQUEFORT BUTTER

Butter
4 tbsp unsalted butter, room temperature
1/2 cup crumbled blue cheese
1/4 tsp granulated garlic and pepper

4 (8 oz) New York strips, 1 inch thick
Olive oil
Kosher salt
Pepper
4 lemon wedges

Butter: Combine ingredient with the back of a fork, mashing the mixture together until evenly distributed. Steak: Trim most of the exterior fat from the steaks. All to stand at room temperature 20-30 minutes before grilling. Lightly brush both sides with olive oil and season.

Grill over direct high heat until cooked to desired doneness, 6-8 minutes for medium-rare, turning once. Remove from the grill and let rest for 3-5 minutes. Serve warm with butter smeared over the top and lemon wedges served on the side. Serves 4
