CRUSTLESS SAUSAGE QUICHE

1 pound bulk mild pork sausage
12 eggs
2 cups cottage cheese
3 cups shredded Monterey Jack cheese
1 cup shredded mozzarella cheese or cheddar cheese
1/2 cup flour
1/2 cup butter, melted
1 tsp baking powder
Optional Ingredients
2 cups sliced fresh mushrooms
3/4 cup finely chopped onion
1 (4 oz) can chopped green chilies, drained

In a large skillet over medium heat, cook sausage until no longer pink then drain. In a large bowl, beat eggs, cheeses, flour, butter and baking powder. Stir in sausage and any optional ingredients that you want. Transfer to two greased 9 inch round baking dishes, or something basically the same size (dishes will be full). Bake at 375 for 33-38 minutes or until a knife inserted near the center comes out clean.
