FLANK STEAK WITH PINEAPLE SALSA
Category: Beef Steaks
2 tbsp chili powder
2 tsp ground cumin and garlic powder
1/2 tsp dried oregano and dried thyme
1 (1 1/2 - to 2 lb) flank steak
Pineapple Salsa
1 (20 oz) can crushed pineapple, drained
1 medium red onion, diced
1/2 cup chopped fresh cilantro
1/2 tsp salt
Juice of 1 lime
Preheat the grill to high heat. In a small bowl, combine all the ingredients except the steak; mix well. Rub the seasoning mixture all over the steak. Grill the steak for 6 to 8 minutes per side for medium, or until desired doneness. Cut the steak across the grain into thin slices and serve with Pineapple Salsa for a refreshing zest.
PINEAPPLE SALSA: In a medium bowl, combine all the; mix well. Cover and chill for at least 1 hour before serving. Serves 4-6 NOTE: This salsa goes well with grilled chicken and fish, too.
