LAYERED ATHENIAN CHEESE SPREAD

2 (8 oz) pkg cream cheese, softened
2 (4 oz each) pkg crumbled feta cheese
1 garlic clove, pressed
1 (10 oz) pkg frozen chopped spinach, thawed and well drained
1 (7 oz) jar sweet roasted red peppers, drained and patted dry
1/3 cup whole natural almonds, chopped

Combine cream cheese and feta cheese in a bowl. Press garlic over cheese mixture; mix well. Stir in spinach.

Chop red peppers. Line a small bowl with plastic wrap; divide cheese mixture in half. Press half of the cheese mixture into bowl; top with red peppers. Spread remaining cheese mixture over red peppers. Cover; refrigerate several hours to allow flavors to blend.

To serve, invert onto serving plate. Remove plastic wrap. Chop almonds; press onto top of molded cheese. Serve with assorted crackers. Yield: 20 servings
