Wet mix
3 eggs
1/2 cup sugar
1/2 cup oil
1 cup plain yogurt
1 cup grated carrot
1/2 cup chopped walnuts

Dry mix
3 cups self-rising flour
1/2 tsp baking soda
1 tsp cinnamon

Preheat oven to 400. Grease muffin pans. Beat wet ingredients and fold in dry to the wet ingredients until just combined. Spoon into muffin pan and bake for 20-25 minutes or until golden. Serve warm with butter if desired.
