APRICOT AND HONEY-ALE GLAZED SALMON

2 tbsp olive oil
4 (8 oz) salmon filets
16 dried apricot halves-diced
1 cup honey wheat beer
1 tbsp freshly squeezed lemon juice
2 tbsp honey
Finely chopped chives

Sear both sides of salmon filets in olive oil and turn heat to low, add apricots, beer, and lemon juice. Cover and simmer for about 8 to 10 minutes. Remove the salmon and reserve, reduce the sauce on high heat and stir in the honey until smooth. Spoon the sauce over the salmon and garnish with chopped chives. Serves 4
