HONEY-PECAN CHICKEN

Category: Chicken

1 cup butter
1/2 lb pecans, chopped
2 cups honey
4 boneless, skinless chicken breasts
2 cups flour, seasoned with salt and pepper
2 cups buttermilk
1-2 cups vegetable or peanut oil

Sauce: Melt butter and add pecans. Cook for 10 minutes or until tender. Turn heat down to low and add honey. Cook for 5 minutes.

Chicken: Split chicken in half horizontally. Dip in seasoned flour, then in buttermilk and then in flour. Place on a wire rack and allow to rest to let the breading to dry on the chicken while heating the oil in a skillet.

Saute chicken for 12-15 minutes or until golden brown and cooked through, turning once. Remove from pan and pat dry. Serve with warm honey-pecan sauce. Serves 8
