GRILLED HALIBUT WITH A LEMON LIME COMPOUND BUTTER

Marinade:
Juice of 1 lemon and lime
1/4 tsp crushed red pepper
1 tsp wasabi paste
1 tbsp olive oil
1/4tsp black pepper
1 tbsp honey
1 garlic clove, chopped
1/2 tsp salt
Compound butter:
4 oz unsalted butter
Zest of lemon and lime finely chopped
1 clove garlic, minced
4 (6-8 oz) Halibut filets skin on
Combine the ingredients for the marinade in a zip lock bag or bowl and add fish and allow to set at least 1 hour and up to 4 hours.
Soften the butter and add the zest and the garlic. Mix well and set aside for use on the fish after grilling.
Prepare the grill for grilling the fish. Make 2 cuts through the skin length wise just to the flesh of the fish. Grill fish until firm and cooked through (about 6-8 min per side). Remove and place fish on plate and add of the compound butter to each.
