1 cup sour cream
1 (3/4 oz) envelope dry Italian dressing mix
1 (10 oz) package frozen spinach, thawed, chopped, and well-drained
1 cup grated mozzarella cheese
1/2 cup chopped red bell pepper
Mix the sour cream, dressing mix, spinach, cheese, and pepper in a medium-size bowl. Cover and refrigerate for several hours before serving. Serve with your favorite crackers.
