CALICO POTATOES I

Category: Potatoes

6-8 medium potatoes
1/4 cup diced green, yellow and orange bell pepper
3/4 cup diced onion
1 (4 oz) jar chopped pimento
1/2 cup butter
Salt to taste
Pepper Potpourri to taste, or freshly ground black pepper
1 1/2 cups half and half
1 lbs Velveeta, cubed

Preheat oven to 375. Spray a 13x9 inch baking dish with cooking spray. Peel and dice potatoes into bite sized pieces. Rinse and lay in prepared baking dish.

Sprinkle diced peppers and onions evenly over the potatoes. Sprinkle diced pimento over peppers. Dot with butter cubes. Season to taste. Pour milk over all. Cover and bake 45 minutes or until potatoes are tender. Uncover and arrange cheese cubes over all. Bake, uncovered, until cheese is completely melted and beginning to brown.
