VANILLA MUFFINS TOPPED WITH STRAWBERRIES

4 cups flour
2 cups sugar
1 tbsp plus 2 tsp baking powder
1 light (scant) tsp salt
2 cups milk
2 large eggs
1 tbsp vanilla extract
8 tbsp of melted butter

2-3 large bags of frozen strawberries

Optional: whipped topping

In a large bowl, combine flour, sugar, baking powder and salt.

In a small bowl, whisk the milk, eggs, melted butter and vanilla. Pour milk mixture into the dry ingredients and mix all ingredients thoroughly. Spoon mixture into greased muffin pan and bake at 400 for 20 minutes or until done.

Remove muffins from pan and place on a large platter. Before serving, spoon thawed strawberries over muffins. It's like having an individual muffin strawberry shortcake! Serves 12
