APRICOT GLAZED PORK TENDERLOIN

Small amount of oil
Brown sugar
1 onion, chopped
2 lbs. pork tenderloin
1/4 to 1/2 cup apricot jam

Preheat oven to 350. Rub a small amount of oil over pork tenderloin. Sprinkle brown sugar over tenderloin and rub into meat. Spread apricot jam on top of tenderloin and sprinkle onion on top. Bake 40 to 45 minutes or until cooked thoroughly. Serve hot or cold. Serves 4
