MUSHROOMS STUFFED WITH FETA CHEESE AND PINE NUTS

3 tbsp olive oil, divided
3 tbsp chopped onion
2 tsp finely chopped garlic
1/3 cup pine nuts, toasted
1/2 tsp oregano leaves, crushed
1/8 tsp ground pepper
4 oz crumbled feta, plain or flavored, or goat cheese
1 lb small mushroom, stems removed and chopped
Preheat oven to 400. In a bowl, toss caps with 1 tbsp oil. On a shallow baking pan, arrange caps, cavity side down; bake until tender, about 10 minutes.
In a skillet, heat remaining 2 tbsp oil and add onion, garlic and stems; cook and stir until stems are tender and liquid evaporated, about 5minutes. Stir in pine nuts, oregano and pepper. Transfer to a bowl; stir in cheese until mixture is blended. Turn mushrooms over, stuff with cheese mixture. Bake until heated through, about 15 minutes; serve hot.
