BREADED PORK CHOPS

6 pork chops, 3/4 - 1 inch thick and trimmed of fat
Salt and pepper, to taste
2 eggs
1/4 cup milk
1/2 cup flour and dry bread crumbs
2 tbsp vegetable oil and butter
3 tbsp water

Beat eggs and milk together, combine flour, salt and pepper. Dip the chops in the egg mixture and then the bread crumbs. Heat butter and oil in skillet and brown chops on all sides. Add the water before simmering. Cover and simmer, 35-45 minutes or until done. Serves 6
