BEEF AND VEGETABLE KABOBS

1 lb beef tenderloin, cubed
1 whole red onion
1 lb mushrooms, raw (any type)
4 tsp olive oil, extra virgin
1 cup cooking sherry
4-tsp beef bouillon granules
1/2 tsp black pepper
1 cup rice, brown, uncooked
Place beef in a flat glass pan. Cut onion into chunks suitable for skewering; add to pan. Clean mushrooms and leave whole; add to pan.
Blend olive oil and sherry. Dissolve bouillon granules in about 4 tbsp hot water; add to oil and sherry with pepper. Pour liquid over meat and veggies, toss well to coat. Cover and refrigerate at least one hour; overnight is fine.
Prepare rice according to pkg instructions. After meat has marinated one hour, remove from refrigerator. Start grill and thread beef, mushrooms and onions onto skewers. Place kabobs on grill and cook, turning frequently and basting with marinade. Serve kabobs over rice.
