Italian Sausage Soup

1 gal. tomato sauce
2 gal. water
5 lb. Italian sausage
1 large onion (diced)
2 large cans tomatoes
1 C. wine
2 Tbsp. sugar
2 minced garlic cloves
Parsley to taste
Italian Seasoning to taste
Salt and Pepper to taste
Reserved Parmesan cheese rind
2 zucchini, cubed
1 pkg. rotini noodles
2 cans black olives (whole, drained)
1 lb. fresh chopped spinach
Parmesan cheese, grated, reserving rind for stock
In a large pot add tomato sauce, water, onion, canned tomatoes, wine, sugar, garlic, parsley, Italian Seasoning, salt, pepper and cheese rind. Bring to a boil. Cook Italian sausage and add to boiling pot, along with the zucchini. Simmer for an hour or so, stirring occasionally. Remove the cheese rind from the soup. Add a package of rotini. Boil for 10 minutes or until rotini is done. At the last minute, add 2 cans black olives and chopped spinach. Serve with Parmesan cheese.
