APPLESAUCE WALNUT MUFFINS

1 1/3 cups flour
2 tsp baking powder
1 tsp cinnamon
Dash salt
1 egg
1/2 cup brown sugar
1 cup applesauce
1 apple, peeled, cored and finely chopped
1/3 cup canola oil
1/2 cup walnuts, toasted and chopped

Preheat oven to 350. Grease muffin pan.In a large bowl, combine flour, baking powder, cinnamon and salt. In separate bowl, mix together the egg, sugar, applesauce, apple and oil. Combine the dry ingredients into the wet ingredients. Place walnuts on cookie sheet and toast for about 8 minutes. Chop finely. Fold walnuts into mix. Divide the batter into the greased muffin tin. Bake for 20-25 minutes.
