STRAWBERRY BLOSSOMS (Stuffed Strawberries)

12 fresh strawberries
3 oz softened cream cheese
1 tbsp sour cream
2 tbsp confectioners sugar
Mint leaves for garnish (optional)
Cut stems off of the strawberries and place them on a cutting board or other flat surface. Slice each strawberry down to about 1/4 inch of the base, one time horizontally and another vertically. This will give you 4 separate petals to pull apart slightly and add the cream cheese mixture. Combine the remaining ingredients in a bowl and mix until light and fluffy. Using a pastry bag, small baggie with one corner cut off, or small spoon, fill the strawberries with your mixture. Use strawberry cream cheese for extra sweetness. Refrigerate or store in a cooler until ready to eat.
