MIXED BERRY COBBLER
Category: Cobblers/Crumbles and Crisps
Filling
6 cups fresh or frozen (unthawed) mixed berries (blueberries, blackberries, raspberries and/or strawberries)
3/4 cup regular or nonalcoholic sweet fruit wine, such as blackberry or cherry
2 tsp vanilla extract
3/4 cup sugar
3 tbsp quick-cooking tapioca
1 tsp ground cinnamon
Topping
1 3/4 cups old-fashioned rolled oats
1 cup flour
3/4 cup packed brown sugar
3/4 cup chopped toasted walnuts or pecans*
3/4 cup butter, melted
2 tsp vanilla extract
1 1/2 tsp ground cinnamon
Preheat oven to 350. Place berries in 8-inch square baking dish; add wine and vanilla. Sprinkle with sugar, tapioca and cinnamon (no need to stir).
In large bowl, stir together all topping ingredients; sprinkle over fruit. Pat down gently.
Bake 1 hour or until top is golden brown and juices are bubbling. Serve warm or at room temperature.
Top it with ice cream or whipped cream.
Serves 8
TIP To toast walnuts, place on baking sheet; bake at 350°F. for 6 to 8 minutes or until pale brown and fragrant. Cool.
