*CREAM CHEESE CHICKEN WITH RICE* - Easy

1/2 small onion, diced
1/2 cup chopped mushrooms and celery
3 boneless, skinless chicken breasts, cut into bite-size pieces
1 small pkg dry Italian salad dressing mix
4 cups instant rice, cooked according to package directions
1 can cream of chicken soup
1 (8 oz) pkg cream cheese, room temperature
1/4 cup water

In a skillet, saute vegetable until tender. Add chicken and toss with dressing mix. Add water and cook over medium-high heat, covered until chicken is done. Add cream cheese and soup. Let cook for an additional 5 minutes or until cream cheese has melted. Serve over rice.
