2 (14-16 oz) pkg frozen broccoli, cauliflower and carrots, do not thaw
2 large onions, sliced
6 large potatoes, sliced 1/2 inch thick
8 oz mushrooms, sliced
6 cups shredded cheese
6 tbsp butter
Salt, pepper and garlic, to taste
Boil potatoes until tender; drain. In a roasting pan, layer the ingredients, repeating the layers ending with the cheese until all ingredients are used. Place slices of butter on top. Cover with foil and bake at 350 for 30-45 minutes. NOTE: This is also good cooked on the grill.
