MUSHROOMS WITH CRISPY PHYLLO

4 sheets phyllo dough pastry
4 tbsp butter, melted
2 tbsp olive oil
1 garlic clove, crushed
4 cups shiitake mushrooms, sliced
1 tbsp thyme, chopped
Pinch of salt
10 green peppercorns, crushed
2 tbsp dry sherry
4 thyme sprigs, to garnish
Preheat the oven to 400. Brush muffin tin and sheets of phyllo pastry lightly with melted butter. Crumple each sheet loosely into a 4-inch round shape. Gently press each round down into muffin tin cup. Bake for about 8 minutes, or until crisp.
Meanwhile, heat the olive oil in a medium-sized skillet. Add the garlic, mushrooms, thyme, pinch of salt, pepper and sherry; stir-fry over medium heat for 4 minutes. Place mushrooms inside pastry cups and garnish with a sprig of thyme.
