COLBY SQUARES

Herb Crust
1/2 cup sifted flour
1/4 tsp salt
1 tsp Italian seasoning
1/2 cup firm butter
1/4 cup cold milk

Filling
2 cups chopped cooked turkey or chicken
1/3 cup chopped green onion
8 oz grated Colby cheese
6 slices crisp-cooked bacon
1/8 tsp salt
1 1/4 cups milk
2 tbsp grated parmesan cheese
1/8 tsp paprika
4 eggs
1/8 tsp white pepper
1/4 tsp dry mustard

Crust: Combine dry ingredients in a food processor. Pulse in butter until particles are the size of peas. Sprinkle with milk, adding just enough to make a stiff dough. Remove from brown and shape into a square and roll on a floured board to 12x16 inch. Fold into thirds and lift into a 13x9 inch baking pan. Unfold and carefully fit into the dish, trimming edges even with top of dish. Fold crust down 1/4 to 1/8 inch to form a rim. Press with tines of fork.

Filling: Sprinkle crust with meat, then onion. Cover with cheese, then bacon. Beat eggs with seasonings. Stir in milk and pour carefully over filling. Sprinkle with parmesan cheese and paprika. Bake at 400 on lowest rack in oven for 25-30 minutes or until set in center. Cool on wire rack. Cut into squares. Serve warm or cold.
